Pepper Steak Beef Dish
- 1 1/2 lb. inch thick round steak
- 1/4 c. salad oil
- 1 clove garlic, crushed
- 3 small onions, sliced
- pinch of thyme
- 1/2 c. tomato puree
- 1/2 tsp. sugar
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 1/2 c. cold water
- 3 medium sweet peppers, chopped in inch sq.
- Cut meat into inch squares.
- Brown meat in oil, stirring often, for about 20 minutes.
- Add onion and crushed garlic during last minutes of browning.
- Add other seasonings, tomato puree and 1/2 cup of the water.
- Cover and simmer until meat is tender, about 1 hour, stirring occasionally and adding remaining water gradually as liquid evaporates.
- Add chopped sweet peppers and cook 15 minutes longer.
- Serve hot over noodles, rice or whipped potatoes.
