Barbecued Rabbit
- 2 rabbits, quartered
- 1 c. salad oil
- 1/4 c. vinegar
- 1/4 c. red wine
- 1 small onion, minced
- 1 clove garlic, minced
- juice from 1/2 lemon
- 4 Tbsp. Worcestershire sauce
- 4 Tbsp. A.1. sauce
- 4 Tbsp. ketchup
- 1/8 tsp. cayenne pepper
- several drops Tabasco
- 1 tsp. celery salt
- 1/4 tsp. black pepper
- Combine all
- sauce
- ingredients
- and simmer 20 minutes, stirring frequently.
- Baste
- quartered rabbits generously with sauce and grill over charcoal.
- Turn every 5 minutes and baste heavily each time.
- Meat
- should be ready to fall off the bone in 30 to 40 minutes.
- Serve
- with
- corn
- on the cob, cole slaw and fresh rolls.
- Serves 6 to 8.
