Apple-Walnut Muffins

  1. Preheat oven to 350u0b0.
  2. Grease 12 medium-sized muffin cups or line with paper liners; set aside.
  3. Combine dry ingredients in medium bowl.
  4. Add combined eggs, apple juice concentrate, butter and vanilla; mix just until dry ingredients are moistened.
  5. Stir in apple and walnuts.
  6. Spoon batter into prepared cups, filling each cup 3/4 full.
  7. Bake 25 minutes or until golden brown.
  8. Let stand in pan on wire rack 5 minutes.
  9. Remove from pan.
  10. Serve warm or at room temperature.
  11. Makes 1 dozen.
