Corn And Shrimp Chowder
- 8 oz. salt pork, sliced
- 2 onions, chopped
- 1/2 c. chopped celery and tops
- 3 Tbsp. chopped green pepper
- 3 Tbsp. finely diced carrot
- 1/2 bay leaf, crumbled
- 2 Tbsp. flour
- 4 c. water
- 3 c. diced potatoes
- 1 can (16 oz.) creamed corn
- 1 c. whole corn
- 2 c. evaporated milk
- 1 lb. shelled shrimp, cooked
- salt and pepper
- Fry pork until crisp.
- Remove from grease and pour off all but 3 tablespoons.
- Add next 5 ingredients and cook 5 minutes.
- Blend in flour.
- Add water and potatoes.
- Bring to a boil and simmer 15 minutes.
- Add corn, milk and shrimp.
- Heat well, but do not boil as milk will curdle.
- Season with salt and pepper.
- Add pork.
