Vitalbrot
- 400 g whole wheat flour
- 100 g white flour
- 2 teaspoons salt
- 30 g flax seeds
- 1/2 teaspoon coriander
- 1/16 liter milk
- 250 g plain yogurt
- 40 g fresh yeast cakes
- 1 teaspoon sugar
- 30 g flax seeds
- Mix whole wheat flour and white flour together with 2 teaspoons salt, 30 gr. flax seed and 1/2 teaspoons coriander.
- Mix milk and joghurt together in a saucepan and warm. Add yeast and sugar, stir until completely combined.
- Pour milk mixture, little by little into flour and knead thoroughly. The dough will be very firm. (I ended up adding about 50ml more milk).
- Let dough rise, covered, in an oven set at 30u0b0C for 2 hours. After 2 hours punch the dough down and knead once more. Form into a round loaf.
- Brush the loaf with water and sprinkle with the remaining flax seed. Press softly into dough.
- After you have shaped the dough into a loaf preheat the oven to 200u0b0C Bake the bread on the middle rack for 50-60 minutes.
- This bread is very crusty.
