French Market Doughnuts
- 1 c. milk
- 1/4 c. sugar
- 3/4 tsp. salt
- 1/2 tsp. nutmeg
- 1/2 tsp. cinnamon (if desired)
- 1 pkg. yeast
- 2 Tbsp. lukewarm water
- 2 Tbsp. salad oil
- sifted confectioners sugar
- Scald milk.
- Add sugar, salt, nutmeg and cool to warm. Sprinkle yeast on the 2 tablespoons warm water to dissolve. After milk has cooled, add oil, eggs and dissolved yeast.
- Blend with wooden spoon.
- Gradually add flour, beating well.
- Cover with wax paper, then towel.
- Let rise until doubled.
- Turn soft dough onto well floured board and knead well, but gently.
- Roll out to 18 x 12-inches and cut into 2 x 2-inch squares.
- Cover again with towel and let rise 30 or 40 minutes.
- Fry in deep fat at 375u0b0 until golden brown (takes about 1 or 2 minutes to brown).
- Drain on paper towels and while warm sprinkle on sugar or shake in paper bag.
- Use plenty of confectioners sugar.
- This doughnut does not taste like our regular doughnuts.
