Patty Melt

  1. Combine beef, salt and pepper and mix lightly.
  2. Shape into 2 patties.
  3. In a greased heavy frying pan, grill hamburger patties over medium-high heat 4 to 5 minutes per side for rare and 6 minutes per side for medium.
  4. Add vegetable oil to pan and then onions.
  5. Saute onions until soft and golden brown.
  6. Top 2 slices of bread with hamburgers, then with onions, a slice of cheese and remaining slices of bread.
  7. Lightly butter outside of sandwich and grill on a griddle or in a heavy frying pan until brown on both sides and cheese is melted.
  8. (If you prefer, you can make sandwich with rye toast and melt the cheese under a broiler.)
