Fried Rice With Chicken
- 1 1/2 c. white rice
- 1 1/4 lb. boneless chicken, cut into 1/2-inch chunks
- 1/4 c. soy sauce
- 1/4 tsp. pepper
- 3 Tbsp. vegetable oil
- 2 eggs, beaten
- 2 c. chopped white or yellow onions, cubed
- 2 c. chopped carrots (cubed)
- 2 c. frozen green peas, thawed
- 2 green onions, thinly sliced
- Cook rice according to directions on package.
- Mix the soy sauce and pepper in a small bowl; set aside.
- Place chicken in a medium bowl and add 1 tablespoon to chicken.
- Mix well to marinate.
- Heat 1 tablespoon of oil in a wok or large skillet over high heat.
- Add eggs; stir to cook until done.
- Make sure eggs are separated.
- Remove and put on a plate.
- Set aside.
- Add remaining oil to wok or skillet.
- Add chicken; stir-fry until fully cooked. Remove; put on plate and set aside.
- Cook onions, carrots and peas in wok or skillet; stir-fry for 1 minute.
- Leave in wok or skillet.
