Mexican Bean Casserole
- 1 1/2 lb. ground beef
- 2 eggs, slightly beaten
- 1 1/8 tsp. salt
- 2 dashes pepper
- 3 Tbsp. flour
- 4 1/2 Tbsp. vegetable oil
- 3/4 c. chopped green pepper
- 1/2 c. chopped onion
- 3 (8 oz.) cans tomato sauce
- 1 1/2 tsp. chili powder
- 1/4 tsp. cinnamon
- 1/2 tsp. ground cumin
- 1 1/2 to 2 lb. green beans
- 3 slices American cheese
- Heat oven to 400u0b0.
- In a bowl, mix beef, eggs, salt and pepper.
- Shape into 1-inch balls (coat with flour).
- In a large skillet, over moderately high heat, heat oil and brown pepper and onion slightly.
- Remove with slotted spoon.
- In same skillet, brown floured meat balls.
- Drain off excess fat.
