Cottage Pork Chops
- 6 medium pork chops
- 1/2 cup flour
- 1 clove garlic, chopped
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon parsley
- 2 tablespoons flour
- 6 medium potatoes
- 2 medium onions
- 2 cups hot milk
- 1 1/2 teaspoons salt
- 1/2 teaspoon dry mustard
- Cut fat from chops.
- Roll chops in flour and brown in skillet along with garlic.
- Season with salt and pepper.
- Combine parsley with 2 tbsp flour.
- Butter a 2qt casserole dish and put 3 of the chops in a single layer.
- Sprinkle with 1/2 of the flour and parsley mixture.
- Top with 1/2 of the potatoes and onions.
- repeat layers.
- Mix milk, salt and mustard.
- Pour over all and cover tightly.
- Bake for 1-1/2 hrs at 350.
- remove cover the last 30 minutes to brown.
- You can use more chops and more potatoes.
