Chocolate Mud Slices

  1. Preheat oven to 160C.
  2. Spray an 8-inch cake pan with cooking spray; line base with baking paper, extending over two sides.
  3. In a large bowl, combine cocoa and water; stir until smooth.
  4. Add melted chocolate, butter, sugar and ground almond.
  5. Stir in egg yolks, one at a time, until well blended.
  6. Beat egg whites with electric mixer until soft peaks form.
  7. Gently fold into the chocolate mixture.
  8. Pour batter into prepared pan; bake for 1 hour or until firm.
  9. Remove cake from pan; slice and dust with icing sugar before serving.
