Ice Cream Puffs
- 1 c. water
- 1/2 c. butter
- 1/2 tsp. salt
- 1 tsp. sugar
- 1 c. flour
- 4 eggs (5 if small)
- ice cream
- hot fudge
- whipped cream
- In a small saucepan, bring to a boil the water, butter, salt and sugar.
- Add all at once the flour and cook the paste over a low heat, beating it briskly and constantly until the ingredients are thoroughly combined and the mixture clearly leaves the sides of the pan and forms a ball.
- Remove pan from heat and beat in the eggs one at a time.
- (If eggs are unusually small, use an extra one.) Drop tablespoon on greased cookie sheet.
- Bake in hot oven (425u0b0) for 15 to 18 minutes.
- Reduce oven to 375u0b0 and bake until golden brown and feels light in the hand.
- If puffs brown too quickly, cover with a piece of paper.
