Ice Cream Puffs

  1. In a small saucepan, bring to a boil the water, butter, salt and sugar.
  2. Add all at once the flour and cook the paste over a low heat, beating it briskly and constantly until the ingredients are thoroughly combined and the mixture clearly leaves the sides of the pan and forms a ball.
  3. Remove pan from heat and beat in the eggs one at a time.
  4. (If eggs are unusually small, use an extra one.) Drop tablespoon on greased cookie sheet.
  5. Bake in hot oven (425u0b0) for 15 to 18 minutes.
  6. Reduce oven to 375u0b0 and bake until golden brown and feels light in the hand.
  7. If puffs brown too quickly, cover with a piece of paper.
