Greek Shrimp And Penne Pasta
- 5 Tbsp. olive oil
- 1 1/2 tsp. garlic, minced
- 1 large can Italian tomatoes
- 1/2 c. dry white wine
- 1/8 c. basil
- 1/4 tsp. oregano
- 1 1/2 lb. large shrimp
- dash of hot pepper
- 1/2 lb. Feta cheese, crumbled
- 1/3 lb. penne pasta
- salt and pepper to taste
- Heat 2 tablespoons olive oil in saucepan.
- Add garlic and cook for 1 minute.
- Add wine, salt and pepper, basil and oregano and cook at a gentle simmer for 10 minutes.
- Heat remaining 3 tablespoons olive oil in skillet.
- Add shrimp and cook until they turn pink.
- Add dash of hot pepper and stir.
- Spoon shrimp and pan juices into small baking pan.
- Sprinkle with Feta cheese.
- Spoon tomato sauce over.
- Bake, covered, at 400u0b0 for 10 minutes.
- Cook pasta while baking.
- Drain pasta; place in shallow dish and spoon shrimp and sauces over.
- Serve with bread and salad.
- Enjoy!
