Breakfast Muffins
- 1 c. bran cereal, crushed
- 2/3 c. milk
- 1 3/4 c. all-purpose flour
- 3/4 c. chopped apple
- 1/2 c. packed brown sugar
- 1/2 c. carrots, peeled and shredded
- 1/4 c. granulated sugar
- 1/4 c. flaked coconut
- 1/4 c. vegetable oil
- 2 eggs
- 3 tsp. baking powder
- 2 tsp. ground cinnamon
- 1 tsp. vanilla
- 1/2 tsp. salt
- Heat oven to 375u0b0.
- Grease 12 medium muffin cups or line with paper baking cups.
- Mix cereal and milk in a larger bowl; let stand 5 minutes until cereal is softened.
- Stir in remaining ingredients.
- Fill muffin cups almost full.
- Bake 22 to 25 minutes until golden brown.
- Immediately remove from oven.
- Yields 1 dozen.
