Lobster A La King
- 1 (14 ounce) can lobsters
- 4 tablespoons butter
- 1 cup fresh mushrooms or 1/2 cup canned mushroom, sliced
- 2 tablespoons green peppers, sliced
- 3 tablespoons flour
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 1 cup lobster liquid and milk
- 1/2 cup cream
- 1 tablespoon lemon juice
- halved toasted English muffins or toast rounds
- Drain lobster. Reserve liquor, and flake the meat. Melt the butter and add mushrooms and green pepper. Stir constantly over low heat 2 minutes. Stir in the flour and seasonings. Add lobster liquor and milk and cream gradually, while stirring constantly.
- Beat in lemon juice and add flaked lobster. Heat thoroughly, and add more salt if necessary.
- Serve over toasted English muffing or toast rounds. Yields 6 medium servings, or 4 generous servings.
