Low Glycemic Oat Nut Bars For The Diabetic
- 2 cups sunflower seeds (ground)
- 3/4 cup sesame seeds
- 2 cups rolled oats
- 1/2 cup pumpkin seeds
- 1/2 cup cocoa
- 3/4 cup almond butter (or other nut butter)
- 1/2 cup barley malt
- 2 teaspoons vital wheat gluten
- 2 teaspoons brewer's yeast
- 1/4 cup flax seed
- 1/2 cup dried cranberries (fruit sweetened if you can find)
- 1/2 cup slivered almonds
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/4 cup Xylitol sweetener
- 2 tablespoons vanilla
- 1 1/2 cups agave nectar
- Mix all the dry ingredients first, then add the Agave and vanilla. A very stiff dough will form. If it is too stiff add a bit more Agave. Form into balls or roll out onto a cookie sheet and cut into bars.
