Shrimp Gumbo
- 5 Tbsp. bacon drippings
- 6 Tbsp. flour
- 1/2 c. onion
- 1/2 c. celery
- 1/2 c. bell pepper
- 1 garlic
- 2 to 3 c. tomatoes
- 5 to 6 c. water
- 1 c. okra
- dash of Tabasco
- 2 to 3 tsp. salt
- 1/2 tsp. Worcestershire sauce
- 1/2 bay leaf
- black and red pepper to taste
- 1 lb. shrimp
- 1 1/2 tsp. gumbo file powder
- Brown flour in drippings to make golden roux.
- Add onion, celery, pepper and garlic until tender, but not brown.
- Add tomatoes, water, okra, Tabasco, salt, Worcestershire sauce, bay leaf, pepper and shrimp.
- Simmer about an hour.
- Remove a little liquid and stir file into it.
- Add to other.
- Careful not to boil after adding file as it will become stringy.
- Serve over rice.
