Lizzie Juday'S Green Tomato Mincemeat
- 1/2 lb. suet
- 6 lbs. green tomatoes
- 12 apples, peeled & cored
- 2 c. cider
- 1 lb. raisins
- 1 orange
- 4 c. brown sugar
- 1 tsp. salt
- 2 tsp. cinnamon
- 1 tsp. nutmeg
- 1 tsp. allspice
- 1/2 tsp. ground cloves
- Finely chop the suet by hand or in food processor.
- Transfer to a large (not aluminum) saucepan.
- Put over low heat and cook gently.
- Finely chop apples and tomatoes and add to the suet. Stir to mix.
- Pour on the cider; add the raisins and bring to a slow bubble.
- Thinly slice the orange and remove the seeds.
- Chop the slices into tiny pieces and add to the tomato mixture.
- Blend in the remaining ingredients and simmer, uncovered, for 2 hours, or until the mixture has thickened to a juicy relish like consistency.
- Cool to room temperature & refrigerate.
- May be frozen or canned.
