Fish Dijon
- 1 lb. fish fillets
- 2 Tbsp. lemon juice
- 1 Tbsp. margarine
- 1 Tbsp. cornstarch
- 1/4 tsp. pepper
- 1 c. skim milk
- 1/2 tsp. dried basil leaves
- 1 Tbsp. vinegar
- 1 Tbsp. Dijon mustard
- 1/2 tsp. dried oregano
- Place fillets on a nonstick baking dish.
- Sprinkle lemon juice over the top.
- Bake covered at 450u0b0 for 8 to 10 minutes or until fish flakes easily.
- While fish bakes, melt margarine in a small saucepan.
- Blend in cornstarch and pepper until smooth.
- Add milk. Heat to a boil, stirring constantly.
- Boil 1 minute.
- Remove from heat.
- Add remaining ingredients.
- Heat until hot, then spoon sauce over baked fish fillets.
- Serve immediately on warmed platter.
