Zucchini Bread Plus
- 3 c. flour
- 2 c. sugar
- 1/2 tsp. baking powder
- 1 tsp. each: baking soda, cinnamon and salt
- 1/2 tsp. nutmeg
- 3 eggs
- 1 c. oil
- 3 c. grated zucchini
- 1/2 c. chopped, dried apricots
- 1/2 c. chopped apple
- 1 c. pineapple, drained
- 2/3 c. raisins
- 1/2 c. coconut
- 1 c. chopped nuts
- Mix flour, sugar, baking powder, baking soda, cinnamon, salt and nutmeg in large bowl.
- Beat eggs in mixer bowl until thick and lemon colored.
- Add oil; mix well.
- Add dry ingredients; mix just until moistened.
- Stir in zucchini, apricots, apple, pineapple, raisins, coconut and nuts.
- Spoon into 2 greased 5 x 9-inch loaf pans.
- Bake at 350u0b0 for 1 hour or until toothpick comes out clean. Remove to wire rack to cool.
- Can be baked in Bundt pan.
