Beef Stuffed Sopaipillas

  1. SOPAIPILLAS:
  2. In a bowl, combine the flour, salt and baking powder.
  3. Stir in water, milk and oil with a fork until a ball forms.
  4. Gently knead dough on a lightly floured surface for 2-3 minutes.
  5. Cover bowl and let stand for 15 minutes.
  6. Divide into four portions and roll each into a 6 1/2" circle.
  7. Fry each circle, one at a time in oil heated to 375 degrees for 2-3 minutes on each side or until golden brown.
  8. Drain on paper towels.
  9. FILLING:
  10. In a skillet, cook beef and onion over medium heat until meat is brown and crumbly.
  11. Drain any oil.
  12. Stir in the salt, garlic powder and pepper.
  13. SAUCE:
  14. In a separate saucepan, combine soup, broth, chilies and onion powder.
  15. Cook for 10 minutes or until heated through.
  16. ASSEMBLY:
  17. Cut a slit in the side of each sopaipilla.
  18. Fill with 1/2 cup meat mixture.
  19. Sprinkle with cheese.
  20. Serve with sauce.
