Tabouli
- 1 c. dry bulgur wheat
- 1 1/2 c. boiling water
- 1 to 1 1/2 tsp. salt
- 1/3 c. fresh lemon juice
- 1/4 c. olive oil
- 2 to 3 cloves garlic, crushed
- black pepper to taste
- 4 scallions, finely minced
- 1 packed c. parsley, minced
- 1/4 c. fresh mint, minced (1 to 2 Tbsp. dried mint)
- 2 to 3 tomatoes, diced
- lettuce, finely shredded
- 1 c. beans (white or brown) *
- 1 egg
- 1 tsp. salt
- 1/4 tsp. pili-pili (a very hot African red pepper) or any type of hot pepper substitute
- 1 small onion, chopped finely
- *There are many different varieties of beans (brown, white, red speckled, stripped or you name it!) in Africa because beans are the protein substitute in the place of meats.
- You could substitute any dried bean.
