Cheddar Supreme Cheese Cake
- 1 1/2 c. Zwieback crumbs
- 3 Tbsp. sugar (for crust)
- 2 tsp. grated lemon rind
- 6 Tbsp. or 3/4 stick butter or margarine, melted
- 4 (8 oz.) cream cheese
- 1 c. finely grated mild Cheddar cheese
- 1 3/4 c. sugar
- 5 eggs
- 1/2 c. cream (for whipping)
- 1/2 tsp. vanilla
- Mix Zwieback crumbs with 3 tablespoons sugar and 1 teaspoon grated lemon rind in small bowl.
- Blend in melted butter.
- Press evenly over bottom and sides of 8-inch spring-form pan.
- Set pan in a 12-inch long piece of foil; fold foil up along side to catch any butter that may bubble out.
- Chill while making filling.
- Mix all remaining ingredients.
- Pour into crust and bake at 500u0b0 for 12 minutes.
- Lower to 250u0b0 and bake for 2 hours or until firm on top.
- Cool.
- Garnish with canned or fresh fruit.
- Cherries are great!
