Favorite Christmas Cake
- 2 c. sugar
- 1 c. butter
- 6 egg yolks
- 1 lb. sifted cake flour
- 1/2 tsp. salt
- 1 tsp. baking powder
- 1/2 c. whiskey or brandy (I use apricot)
- 1 lb. white raisins
- 1 lb. chopped pecans
- 6 egg whites, almost stiffly beaten
- whiskey or brandy cheesecloth
- Cream together butter and sugar.
- Beat in egg yolks.
- Add dry ingredients, flour, salt and baking powder alternately with 1/2 cup whiskey.
- Stir in white raisins and nuts.
- Fold in beaten egg whites.
- Turn into well-greased and sugared Bundt or angel food pan.
- Bake in preheated 300u0b0 oven for approximately 2 hours.
- Cool, remove from pan.
- Wrap cake in cheesecloth wet with additional whiskey.
- Wrap in foil and store in tin, tightly covered.
- Aging makes it better!
