Gluten Free Banana Bread
- 2 cups brown rice flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 4 large eggs
- 2 cups mashed ripe bananas (approx. 5 bananas)
- 1 cup coconut sugar
- 1/2 cup unsweetened applesauce
- 1/3 cup coconut oil, melted and cooled
- 1 teaspoon vanilla extract
- 1/2 cup semi-sweet chocolate chips or 1/2 cup chopped walnuts
- Preheat oven to 350u0b0F Grease two 8x4-in loaf pans and set aside.
- In a large bowl, combine the flour, baking soda and salt then set aside.
- In a small bowl, whisk the eggs, bananas, sugar, applesauce, oil and vanilla. Stir into the dry along with the chocolate chips, just until moistened.
- Divide the batter between the two pans. Bake for 45 - 55 minutes or until a toothpick inserted in the centre comes out clean. Cool for 10 minutes before removing from the pans to wire racks.
