Good 'N Quick Coffee Cake
- 3/4 c. warm water
- 1 pkg. dry yeast
- 1/4 c. sugar
- 1 tsp. salt
- 1 egg
- 1 tsp. vanilla
- 1/4 c. soft shortening
- 2 1/4 c. flour
- 1 1/2 c. powdered sugar
- 4 Tbsp. cream
- 1/2 c. coconut
- 3/4 c. chopped pecans
- Dissolve yeast in warm water.
- Add sugar, salt and half the flour.
- Beat 2 minutes.
- Add egg, shortening, vanilla and remainder
- of flour.
- Drop by spoonfuls over bottom of greased pan.
- Cover
- and
- let rise until doubled in bulk. Bake in 375u0b0 oven
- until
- golden
- brown.
- Remove
- from
- oven.
- Mix together remaining
- ingredients
- of
- powdered sugar, cream, coconut and pecans.
- Spread topping on top of hot cake immediately.
