Taco Soup
- 2 c. onions, chopped
- 1 Tbsp. cooking oil
- 2 lb. ground beef
- 1 pkg. taco seasoning mix
- 1 pkg. Ranch dressing mix
- 4 (16 oz.) cans diced tomatoes
- 1 (15 to 16 oz.) can pinto beans (undrained)
- 1 (15 to 16 oz.) can red kidney beans (undrained)
- 1 (16 oz.) can whole kernel corn
- 1 (4 oz.) can green chilies
- 1/2 tsp. salt
- Saut onions in oil.
- Add ground beef, stirring until browned. Drain off excess grease.
- Transfer ground beef and onion mixture to a large stockpot.
- Stir in taco seasoning and Ranch dressing mix. Add tomatoes, both beans, corn and salt.
- Bring mixture to a slow boil.
- After mixture begins cooking, reduce heat and simmer for 2 hours, stirring often.
- Garnish with shredded cheese and sour cream.
