Spiced Roast Chicken(Gore Family Recipe)

  1. Prepare stuffing:
  2. In a large saucepan, heat olive oil.
  3. Add onion and saute 2 minutes or until softened.
  4. Stir in garam masala and cook 1 minute.
  5. Add mushrooms, parsnips and carrots; cook, stirring 5 minutes.
  6. Remove from heat; stir in walnuts, thyme, bread crumbs, egg and salt and pepper.
  7. Stuff and truss chicken. Place breast down in a roasting pan; add 1/4 cup water.
  8. Roast 45 minutes; turn chicken breast up and dot with margarine.
  9. Roast about 45 minutes or until a meat thermometer inserted in thickest part of thigh (not touching bone) registers 185u0b0 (85u0b0C).
  10. Transfer to platter; keep warm.
