Spiced Roast Chicken(Gore Family Recipe)
- 1 (3 1/2 lb.) chicken
- 1 Tbsp. margarine
- 2/3 c. Marsala
- 2 Tbsp. olive oil
- 1 onion, finely chopped
- 1 tsp. garam masala
- 4 oz. button, brown or chestnut mushrooms, chopped
- 1 c. coarsely grated parsnips
- 1 c. coarsely grated carrots
- 1/4 c. minced walnuts
- 2 tsp. chopped fresh thyme
- 1 c. fresh white bread crumbs
- 1 egg, beaten
- salt and pepper to taste
- Prepare stuffing:
- In a large saucepan, heat olive oil.
- Add onion and saute 2 minutes or until softened.
- Stir in garam masala and cook 1 minute.
- Add mushrooms, parsnips and carrots; cook, stirring 5 minutes.
- Remove from heat; stir in walnuts, thyme, bread crumbs, egg and salt and pepper.
- Stuff and truss chicken. Place breast down in a roasting pan; add 1/4 cup water.
- Roast 45 minutes; turn chicken breast up and dot with margarine.
- Roast about 45 minutes or until a meat thermometer inserted in thickest part of thigh (not touching bone) registers 185u0b0 (85u0b0C).
- Transfer to platter; keep warm.
