Apricot Crescents(Each Ball Makes 1 Dozen Crescents)
- 1 c. margarine
- 2 c. flour
- 1/2 c. flaked coconut
- 1/4 c. chopped pecans
- 1 egg yolk, beaten
- 1/2 c. sour cream
- sugar
- apricot preserves
- Cut margarine in flour until it resembles coarse meal.
- Combine yolk and sour cream.
- Stir into flour mixture.
- Divide and shape dough into 4 balls.
- Wrap each portion in waxed paper and chill for 4 hours.
- Roll out one portion of dough on floured surface into a 10-inch circle.
- Spread 2 tablespoons apricot preserves on circle and sprinkle with 2 tablespoons coconut and 1 tablespoon chopped pecans.
- Cut circle into 12 wedges.
- Roll up edges, beginning with the wide end and place point side down on ungreased baking sheet. Sprinkle lightly with granulated sugar.
- Bake at 350u0b0 for 20 to 25 minutes or until lightly browned.
