Hot And Sour Vegetable Soup

  1. Heat oil in
  2. soup pot over medium heat.
  3. Add the onion and carrots.
  4. Stir for 3 minutes, then add the garlic and ginger. Cook and stir 1 minute longer.
  5. Add chicken broth, water and soy sauce.
  6. Bring to boil and cook for 1 minute.
  7. Add mushrooms and watercress; boil for 1 minute more.
