Hot And Sour Vegetable Soup
- 2 Tbsp. vegetable oil
- 1 onion, slivered
- 3 carrots, thinly sliced
- 3 garlic cloves, minced
- 1 Tbsp. ginger, minced
- 4 c. chicken broth
- 1 c. water
- 2 Tbsp. soy sauce
- 2 c. mushrooms, sliced
- 1 c. watercress
- 1/2 lb. snow peas
- 1 c. bean sprouts
- 1/4 c. rice vinegar
- 2 tsp. sesame oil
- dash of chili oil
- Heat oil in
- soup pot over medium heat.
- Add the onion and carrots.
- Stir for 3 minutes, then add the garlic and ginger. Cook and stir 1 minute longer.
- Add chicken broth, water and soy sauce.
- Bring to boil and cook for 1 minute.
- Add mushrooms and watercress; boil for 1 minute more.
