Ginger Chicken (Grenada)
- 4 chicken breasts
- 1 small onion (chopped )
- 1 teaspoon garlic
- salt and pepper (to taste )
- 1 teaspoon basil
- 1 1/2 tablespoons ground ginger
- 1 teaspoon Worcestershire sauce
- 1 dash msg (optional- can you believe people stiil use this?)
- oil (for frying )
- 1 tablespoon margarine
- 1 tablespoon flour
- 1 teaspoon chicken bouillon granule (or 1 cube)
- 1/2 cup water
- 1/2 cup sherry wine
- parsley (to garnish)
- Marinate chicken with onion, garlic, salt and pepper, basil, ginger, worcestershire & MSG for 1 hour, refrigerated.
- Saute chicken in oil until golden brown. Remove to baking dish.
- In skillet, add remaining ingredients except parsley. Simmer until it becomes thick and makes a nice sauce. Pour sauce on chicken breasts.
- Bake for 1 hour. 350*. Garnish with fresh parsley.
