King Size Cranberry Orange Muffins

  1. Preheat oven to 375u0b0.
  2. Grease king size muffin pan.
  3. Mix cranberries, 1/4 cup sugar and orange peel; set aside.
  4. In large bowl, combine all dry ingredients, except nuts.
  5. In a separate bowl, mix oil, juice and eggs.
  6. Pour all at once into dry ingredients and stir only until moistened.
  7. Add cranberries and nuts.
  8. Divide batter evenly into the muffin cups.
  9. Bake 25 minutes.
  10. Cool in pan for 5 minutes before removing.
  11. Yield: 6 king size muffins.
