Seafood Chowder
- 1/2 c. minced onion
- 1/4 c. butter
- 2 c. water
- 1/2 c. white wine
- 1/2 c. thinly sliced celery
- 1 c. thinly sliced carrot
- 1 c. diced potato
- 1 bay leaf
- 1/2 tsp. thyme
- 2 tsp. salt
- pepper to taste
- 1 lb. haddock or cod fillets, diced
- 3 c. milk
- 1/4 c. flour
- 1 c. half and half cream
- 6 oz. flaked crab meat
- parsley
- Saute onion in butter.
- Add water, wine, vegetables, seasonings and fish fillets.
- Simmer 20 minutes.
- Gradually add 1 cup milk to flour to make a thin paste.
- Add to hot mixture, stirring and cooking until thick.
- Gradually add rest of milk, half and half, crab meat and parsley.
- Heat thoroughly before serving.
