Spiced Fruit Compote
- 2 (16 oz.) cans chunky mixed fruit in juice or lite syrup
- 2 Tbsps. brown sugar
- 1 Tbsp. cornstarch
- 1/2 tsp. curry powder
- 1/2 tsp. dry mustard
- 1/2 c. small pitted prunes
- 1/2 c. dried apricots
- 2 Tbsps. chopped peanuts, if desired
- Drain fruit, reserving all liquid in a saucepan.
- Set fruit aside.
- Mix brown sugar, cornstarch, curry powder and dry mustard with reserved liquid until well-blended.
- Stir in prunes and apricots.
- Cook over medium heat, stirring frequently, until mixture boils and thickens.
- Add drained fruit.
- Continue cooking, stirring occasionally, until mixture is just heated through.
- Serve immediately; garnish with peanuts, if desired.
- Makes 4 servings each with 162 calories, less than 1 g. fat and 0 mg. cholesterol.
