Sausage Bean Burritos
- 3-4 lbs. Pork Sausage
- 1/2 c. Green Pepper, chopped
- 1/3 c. Onion, chopped
- 1 15 oz. can Black Beans, rinsed and drained
- 1 1/2 c. Long Grain Rice, cooked
- 1 1/2 c. Salsa, divided
- 10 Flour Tortillas (7 in. size)
- 1 c. Cheddar Cheese, shredded, divided
- In a large saucepan, cook sausage, green pepper and onion over medium heat until meat is no longer pink.
- Drain.
- Stir in beans, rice and 1 cup of salsa.
- Mix well.
- Spread about 1/2 cup of sausage mixture down the center of each tortilla.
- Sprinkle with 1 T. cheese.
- Roll up and place, seam side down, in a greased 13 x 9 x 2 in. baking dish.
- Top with remaining salsa, cover and bake at 350 degrees for 30 min.
- Uncover; sprinkle with remaining cheese.
- Bake 5-10 min. longer or until cheese is melted.
- Yield: 10 Burritos.
