Banana Bran Muffins

  1. Combine first 7 ingredients in a large bowl, make a well in center of mixture; set aside.
  2. Combine egg and brown sugar in a medium bowl.
  3. Beat at medium speed until smooth.
  4. Add bananas, raisins, oil and vanilla.
  5. Beat well.
  6. Add to flour mixture, stirring just until dry ingredients are moistened.
  7. Spoon batter into greased muffin pans, filling 2/3 full.
  8. Bake at 375u0b0 for 20 to 25 minutes.
  9. Remove from pan immediately.
  10. Let cool on wire rack.
  11. Makes 1 dozen.
