Banana Bran Muffins
- 3 c. all-purpose flour
- 3/4 c. whole wheat flour
- 1/2 c. unprocessed oat bran, uncooked
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1 tsp. ground cinnamon
- 1 egg
- 3/4 c. firmly packed brown sugar
- 1 1/3 c. raisins or chopped nuts
- 1/3 c. vegetable oil
- 1 tsp. vanilla extract
- 1 1/3 c. mashed ripe bananas
- Combine first 7 ingredients in a large bowl, make a well in center of mixture; set aside.
- Combine egg and brown sugar in a medium bowl.
- Beat at medium speed until smooth.
- Add bananas, raisins, oil and vanilla.
- Beat well.
- Add to flour mixture, stirring just until dry ingredients are moistened.
- Spoon batter into greased muffin pans, filling 2/3 full.
- Bake at 375u0b0 for 20 to 25 minutes.
- Remove from pan immediately.
- Let cool on wire rack.
- Makes 1 dozen.
