Red Cabbage

  1. Shred cabbage as finely as possible.
  2. Grate apple (without peel).
  3. Place apple and onion in small amount of oil in heavy kettle or pot.
  4. Cook just enough to glaze.
  5. Add cabbage, on fairly high heat, stirring constantly until cooked down in size a little. Add brown sugar, honey, cloves, vinegar and salt.
  6. Turn down heat and slowly cook mixture, covered, about 3/4 to 1 hour.
  7. During cooking, stir 3 to 4 times to prevent burning on bottom of pan. Taste cabbage; a little more of each ingredient may be required and added at this time until the taste is "just right".
  8. Place finished cabbage in dish with cover; store in refrigerator or cool place. Cabbage is best prepared hours ahead of time, stored and reheated just before serving, giving all ingredients time to blend properly. Reheat and enjoy!
