Sister Barbara'S Peaches N' Cream
- 1/2 stick melted margarine
- 2 c. grahan cracker crumbs
- 4 c. peeled, sliced peaches
- 1 3/4 c. sugar
- pinch salt
- 2 heaping Tbsp. corn starch
- 1 c. water
- 1 pkg. peach (3 oz.) Jell-o
- 1 pkg (8 oz.) cream cheese
- 1/2 c. cold milk
- 1 carton (12 oz.) Cool Whip
- Stir a scant 1/2 c. sugar into peaches; set aside.
- Mix 3/4 cup sugar, salt, corn starch and water.
- Cook, stirring until clear and thick.
- Remove from heat.
- Add peach Jell-o.
- Stir to dissolve. Allow to cool to room temperature.
- When cool, add peaches.
- Beat cream cheese with 1/2 cup sugar until fluffy.
- Gradually add milk and continue to beat.
- Fold in Cool Whip by hand.
- Spread one half cream cheese mixture over the prepared crust.
- Add all the peach mixture and top with remaining cream cheese mixture.
- Sprinkle with reserved graham cracker crumbs.
- Chill.
- Best made a day before serving.
