Chicken And Crab Casserole
- 5 Tbsp. butter
- 1/2 c. finely chopped onion
- 1 c. light cream
- 1/4 tsp. pepper
- 1 c. peas, cooked
- 1 c. buttered bread crumbs
- 1/4 c. flour
- 1 c. chicken stock
- 1/2 tsp. salt
- 2 c. cooked chicken, cut in pieces
- 1 c. fresh or canned crab meat
- Preheat oven to 325u0b0.
- Melt butter in saucepan.
- Add onion; saute about 10 minutes or until soft.
- Stir in flour.
- Add the stock and the cream slowly.
- Add salt and pepper.
- Bring to a boil.
- Cook 1/2 minute, stirring constantly.
- Arrange chicken, peas and crab meat in layers in a buttered 1 1/2-quart casserole dish.
- Cover with sauce.
- Top with bread crumbs.
- Bake 25 minutes or until browned on top.
- Serves 6.
