Cranberry Orange Bread
- 2 c. flour
- 1 c. oats (uncooked)
- 3/4 c. sugar
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt (optional)
- 3/4 c. orange juice
- 2 eggs
- 1/3 c. oil
- 1 Tbsp. grated orange peel
- 3/4 c. chopped cranberries
- 1/2 c. chopped nuts (optional)
- Heat oven to 350u0b0.
- Grease and flour bottom only of 9 x 5-inch bread pan.
- Combine flour, oats, sugar, baking powder and baking soda, mixing well.
- Set aside.
- Beat orange juice, eggs, oil and orange peel until mixed thoroughly.
- Add to dry ingredients, mixing just until moistened.
- Stir in cranberries and nuts.
- Pour into pan.
- Bake 60 to 70 minutes or until wooden pick inserted in center comes out clean.
- Cool 10 minutes.
- Remove from pan.
- Cool completely.
