Cinnamon Apple Tortilla Cups
- 1 Tbsp. plus 1 tsp. sugar
- 1 tsp. ground cinnamon
- 4 to 6-inch medium tortillas
- 4 small apples, pared and grated
- 3/4 c. plain nonfat yogurt
- 1/4 tsp. nutmeg
- 1/4 c. whipped topping
- Preheat oven to 350u0b0.
- In a small cup combine 2 teaspoons of sugar and 1/2 teaspoon of cinnamon.
- Lightly spray tortillas on both sides with nonstick cooking spray.
- Sprinkle both sides with cinnamon and sugar mixture.
- Press each tortilla into a muffin or custard cup, forming a cup.
- Bake tortilla cups 5 to 7 minutes just until edges begin to brown.
- Cool completely on rack.
- Press to open while tortillas are still warm, if necessary to maintain cup shape.
- Squeeze excess moisture from grated apple.
- Place in medium bowl.
- Stir in yogurt, nutmeg, the remaining 2 teaspoons of sugar and remaining 1/2 teaspoon cinnamon.
- Cover and refrigerate until ready to use.
