Oriental Casserole
- 1 lb. ground beef
- 1/3 c. chopped celery
- 1/3 c. chopped onion
- 1/4 c. chopped green bell pepper
- 1 c. water
- 2 Tbsp. cornstarch
- 1 tsp. sugar
- 1/4 tsp. ground ginger
- 1/4 c. soy sauce
- 2 Tbsp. water
- 1 (16 oz.) can chop suey vegetables, drained
- 1 (10 oz.) pkg. frozen peas
- 1 (3 oz.) can chow mein noodles
- In skillet, cook beef, celery, onion and green pepper until meat is browned.
- Drain.
- Add 1 cup water; bring to boiling. Combine the cornstarch, sugar and ginger.
- Blend in the soy sauce and 2 tablespoons water.
- Add to beef mixture in skillet.
- Cook and stir until mixture is thickened and bubbly.
- Stir in the drained chop suey vegetables.
- Break apart the frozen peas and add to beef mixture.
- Cool quickly.
- Turn into a 2-quart casserole. Bake, covered, in a 400u0b0 oven for 45 minutes.
- Uncover and bake 15 minutes more.
- Serve over chow mein noodles.
- Serves 4.
