Strawberry-Yogurt Pie
- 1 (3 oz.) pkg. strawberry flavored gelatin
- 1 1/4 c. boiling water
- 1 (8 oz.) carton (or 1 cup) strawberry yogurt
- 1/4 c. honey
- 1 pt. strawberries
- 1 (9-inch) graham cracker crumb crust
- whipped cream
- Combine gelatin and boiling water; stir until gelatin is dissolved.
- Beat in yogurt and honey; chill until partially set (mixture will be the consistency of unbeaten egg whites).
- Whip gelatin with electric mixer until light and fluffy, 1 to 2 minutes.
- Reserve a few whole berries for garnish; slice remainder and fold into gelatin.
- Chill again, if necessary, until mixture mounds when dropped from a spoon.
- Turn into crust.
- Chill until firm, several hours or overnight.
- Garnish with whipped cream and reserved berries.
