Braised Turkey Breast With Apple

  1. Cut turkey into 2-inch pieces.
  2. Heat butter, oil and garlic in heavy skillet.
  3. Brown turkey pieces, a few at a time, over medium to high heat.
  4. Remove browned pieces to heavy pot with tight fitting lid.
  5. When all pieces are browned, add brandy, if used, to skillet to deglaze.
  6. Add wine or broth, stirring up all brownings. Pour over meat in pot.
  7. Add parsley and thyme; cover and simmer 10 minutes.
