Gumbo File

  1. Put chicken into heavy saucepot.
  2. Add next 6 ingredients; cover and bring to boil.
  3. Remove foam.
  4. Simmer, covered 1 1/2 to 2 hours until chicken is tender.
  5. Remove chicken from broth.
  6. Strain broth and cool slightly.
  7. Remove fat from surface; remove skin from chicken and meat from bones.
  8. Dice chicken and set aside.
