Shrimp Quiches

  1. Generously grease 2 dozen 1 3/4-inch muffin cups; set aside. Separate rolls into 12 equal pieces.
  2. Cut each in half; press each half into bottom and side of a muffin cup.
  3. Divide shrimp evenly among pastry shells.
  4. Beat together egg, cream, onion, salt and cayenne until well blended.
  5. Using about 2 teaspoons for each, divide evenly among shells.
  6. Sprinkle cheese over tops.
  7. Bake, uncovered, in a 375u0b0 oven for 20 minutes, or until edges are brown and center appears set.
  8. Cool 5 minutes to serve warm, or remove from pans and cool completely on racks, then package airtight and freeze.
