Coca Cola Cake With Broiled Peanut Icing
- 2 cups flour
- 2 cups sugar
- 1 cup butter, melted
- 2 tablespoons unsweetened cocoa
- 1 cup Coca-Cola
- 1/2 cup buttermilk
- 2 eggs, beaten
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1 1/2 cups miniature marshmallows
- 6 tablespoons butter
- 1 cup dark brown sugar
- 2/3 cup creamy peanut butter
- 1/2 cup milk
- 2/3 cup chopped peanuts
- preheat oven to 350.
- grease and flour a 9x13 sheet cake pan.
- Combine flour and sugar in a large bowl.
- in a seperate bowl combine the melted butter, cocoa and Coke (with fizz).
- pour over flour and sugar mixture and blend.
- add buttermilk, eggs,Baking soda and vanilla.
- Fold in marshmellows.
- Pour into the prepared pan and bake for 40 minutes.
- To make the frosting in a bowl cream butter, sugar and peanut butter
- Beat in the milk slowly.
- fold in the peanuts.
- spread over the cake place under broiler for a few seconds or until icing starts to bubble.
