Filipino Beef Stew (Sinigang Na Carne)
- 1 tomatoes, diced
- 1/2 onion, diced
- 3 garlic cloves, minced
- 1/2 lb beef brisket, cut into chunks
- 1/4 lb pork, sliced
- 3/4 teaspoon salt (or to taste)
- 6 ounces bok choy, cut into large chunks 1-2 inches (2-3 cups)
- 2 white radishes, thickly sliced
- pepper, to taste
- 1 (10 ounce) package frozen string beans
- 1 teaspoon lemon juice
- Saute onion, garlic, and tomatoes in hot oil in big pot until onion browns.
- Add beef, pork, and enough rice wash or cold water to cover the meat.
- Bring to a boil, lower heat and simmer until meat is tender (1-2 hours).
- Add salt; bring to a boil for 10 minutes.
- Simmer, and add cabbage & radishes.
- Taste for seasonings and add salt & pepper if needed.
- Add more water if necessary and the string beans.
- Simmer until veggies are tender.
- Just before serving, add lemon juice.
- Serve with rice.
