Frozen Kahlua Cake
- 3/4 c. butter, softened
- 2 c. sugar
- 3/4 c. cocoa
- 4 egg yolks
- 1 tsp. baking soda
- 2 Tbsp. cold water
- 1/2 c. cold coffee
- 1 c. Kahlua, divided
- 1 1/3 c. flour
- 2 Tbsp. vanilla
- 4 egg whites, stiffly beaten
- 1 c. confectioners sugar
- 1 c. chopped nuts (if desired; pecans or walnuts)
- Grease and flour Bundt pan.
- Cream butter and sugar.
- Add cocoa and egg yolks.
- Dissolve soda and water and combine with coffee and 1/2 cup Kahlua.
- Add to batter alternating with flour. Add vanilla and fold in stiffly beaten egg whites.
- Pour batter in pan.
- Run knife through batter to remove air bubbles.
- Bake 1 hour at 325u0b0.
- Combine confectioners sugar and 1/2 of Kahlua.
- Pour over warm cake; cover with foil and freeze.
