Gluten Free Peach Banana Bread
- 1 cup tapioca flour
- 1/3 cup coconut flour
- 2 teaspoons baking powder
- 2 teaspoons cinnamon
- 1/2 teaspoon salt
- 2 eggs
- 1/3 cup coconut oil, melted
- 2 ripe bananas, mashed
- 1/2 cup chopped peaches, fresh or 1/2 cup frozen peaches
- 1/3 cup pure maple syrup or 1/3 cup honey
- 2 teaspoons vanilla extract
- Pre heat oven to 350u0b0.
- Grease and flour a 9 x 3 loaf pan.
- Mix all dry ingredients in a large bowl.
- In another bowl mix all wet ingredients, except peaches.
- Add wet ingredients to the dry ingredients. Mix until well blended.
- Gently fold in the peaches.
- Pour into prepared pan. Place pan on center rack of oven. Bake for 55 to 60 minutes, until tooth pick inserved into center comes out clean.
- Let sit in pan on cooling rack at least 15 minutes before slicing.
